I envy your fall-like weather! My husband's...Wow... I envy your fall-like weather! My husband's relatives live in Michigan. I was astonished at the cool weather we experienced when we visited in June! It is so mild and lovely there doing North Carolina's hot months.A few days this past week, it has cooled off to the 60's around here. Oh, I am so ready for a lovely fall. I am a big fan of the two more moderate seasons...fall and spring. (Though we don't really get a taste of either of those here.)<BR/> Chili sounds so lovely right now. I also love making chili, soups, and homemade bread when it is cold outside. It isn't cool enough for me to make those yet, but I am hoping it will be soon. I made soup a few weeks ago (a really creamy and delicious potato soup) and hubby said, "There is nothing like Hot soup on a Hot day." :) My day is coming though... Mom plucked three from her g...Oh, I love eggplant! Mom plucked three from her garden this afternoon and we came straight to my house and peeled them and sliced them length-wise, then sprinkled them liberally with salt and placed them in a colander over a bowl to weep the bitterness out. Then I rinsed them well and dried them off before cooking them in a just a bit of oil until they were tender, then sprinkled a bit of freshly ground pepper and sea salt over them, along with a bit of lemon juice. Even DH who doesn't care for eggplant scarfed it down! When we were on deputation, we someone served us BAKED eggplant. I will try most anything, and when we were on deputation, I did try lots of things just to be polite. But this eggplant . . . it was horrible! Very slimy. So I didn't like that.
