~Pumpkin Patch Pie~
For dessert today, I made a "Pumpkin Patch Pie" from a recipe found in one of my Gooseberry Patch cookbooks. It turned out very good!
1 and 1/2 lb. pumpkin
1 to 2 apples; peeled, cored, and sliced
1/4 c. raisins
1/2 c. sugar
1 t. cinnamon
1/2 t. nutmeg
1/8 t. ginger
1/8 t. cloves
Wash the pumpkin, cut off top, and clean out. Mix apple slices (I chopped the apples so they would fit in the ), raisins, sugar, and spices. Put mixture into pumpkin. Place on cookie sheet to catch spills. Bake at 375* for 1 and 1/2 hours or until apple slices and pumpkin flesh is fork tender.
This was quick and fun to make, and while the recipe says it serves one, Kevin and I split it. Yummmmmmy!
