~Yum~

So...I've had a "Yuck" post at the top of my blog for over 10 days, I figured it was more than time for a "Yum" post. :-P

Yesterday I was looking at the Money Saving Mom blog, and noticed that Crystal mentioned a brown rice, spinach and cheese casserole. That sounded so good to me, only she didn't post her recipe.

So I made up my own. I still have morning sickness issues, which include not liking onions or garlic, or pretty much any seasoning at all. So I browned some ground beef, drained and rinsed it and then put a frozen package of chopped spinach in it and defrosted it. Then I mixed in cooked brown rice till it looked right, put the mixture into a casserole dish and topped with cheese. Since everything was hot, I just stuck it in the oven until the cheese was nice and melted.

And it was so good! Kevin liked it too - and he usually likes things seasoned well. I didn't even put salt or pepper in it! Easy and delicious! The spinach makes everything moist, so that you don't need anything creamy in it. Although, I bet cream of mushroom soup would be a good addition. But I liked it just the way it was!

    So happy everything is going well with your pregnancy! I have about 29 days left till my precious one is born (unless they take me early which is the plan).

    I am sure you are excitedly getting everything ready :D. Hope you start to feel better with the morning sickness.

  2. I come visit now and again - from Erin and Rebecca's blogs, and I didn't realize that you're pregnant! Congratulations! I love all of the baby things you have knitted!

    I just tried to knit our newest a hat (one of the cute ones with earflaps), but it didn't turn out so cute. Rats.
