Putting Food Up - 2012

This year's food preservation - mostly canning, but some freezing too. This is probably a boring page for most, but I like to have a record of what I put up! :-)

Blueberries:
  • frozen: 8 quarts
  • Low-sugar blueberry spread, 4 8-oz jars
Tomatoes:
  • Jalapeno Salsa - 6 pints
  • Spicy Tomato Salsa - 7 pints, 1 8-oz.
  • Fresh Vegetable Salsa - 4 pints, 1 8-oz.
  • Salsa Verde - 3 pints
  • chopped tomatoes - 5 pints, 18 quarts, 3 1/2 quarts frozen
  • tomato sauce - 10 pints
  • tomato juice - 10 quarts
  • ketchup - 3 pints, 1 12-oz., 7 8-oz. 
Peppers:
  • Pickled Slices (mixed) - 2 pint
  • Basil Banana Pepper Jelly - 6 8-oz.
  • Banana Pepper Slices - 2 pints
  • Jalapeno Slices - 2 pints
  • Pepperoncini (whole) - 2 pints
  • Pepperoncini (chopped) - 2 pints
  • Cowboy Candy (candied jalapeno slices) - 3 pints
  • hot pepper syrup (from Cowboy Candy) - 1 pint
Pickles (Cucumbers):
  • Garlic Dill - 10 pints
  • Dill Sandwich Slices - 4 pints
  • Spears - 6 pints, 1 quart
  • Dill Relish - 3 pints
  • Simply Good Dill Pickles - 4 quarts
  • Sweet Relish - 9 8-oz.
  • Bread and Butter Slices - 5 pints
Green Beans:
  • 26 pints
Apples:
  • Applesauce: 17 pints
  • Apple Pie Jam: 6 8-oz.
