~Menu Plan Monday~



I typically go grocery shopping on Saturday, thus planning my menu from Saturday to Friday. This week, I had to go shopping on Sunday, but will still go shopping next Saturday.

Here are the main courses I will be serving this week:
Sunday ~ Stir Fry (made by my husband)
Monday ~ Vegetable Beef Soup
Tuesday ~ Spaghetti
Wednesday ~ Orange Chicken (crock pot recipe)
Thursday ~ Corn and Chicken Enchiladas
Friday ~ Meat loaf and baked potatoes

Hi Tammy,

Can you post your meatloaf recipe? I haven't had meatloaf in ages and it sounds delicious!

I linked to your post and posted my own menu for the week. You can bet that meatloaf will be on next week's menu.

I also work outside the home full time; do you do any "ahead meal prep" like keeping extra meals or parts of meals in the freezer? Can you share any tips?

The soup and the orange chicken sound divine. I'd love to see the orange chicken one if it comes out, have you made it before? I love using my crockpot this time of year!

The orange chicken: I haven't made the recipe before, so if it turns out, I'll post the recipe!

Trixie, I'll post my meatloaf recipe for you in the next few days. As for ahead meal prep...still working on that one! eeks...I don't really do that well with it!
