~Sweet Potato Fries~

One evening when Kevin and I were eating dinner out, the lady at the table next to us was loudly extolling the benefits of sweet potatoes over potatoes (as she ate her sweet potato). She described to her table mates (and half the restaurant) how she made sweet potato fries instead of regular fries.

So awhile back, I decided to give it a try. And...they were so good! I made them again tonight. Here's how:

***Preheat oven to 425*
***Peel sweet potatoes
***Cut them in narrow strips
***Arrange on cookie sheet
***Sprinkle olive oil over potatoes, toss to coat
***Sprinkle salt and pepper over potatoes
***Bake for about 30 minutes, turning once
***Enjoy!

....or you cheat and buy a sack of precut frozen sweet potato fries at Costco. :) They're lovely.

I get the precut frozen sweet potato fries at Walmart. They are so good & I think they are healthy too. I fixed some the other nite for dinner with bbq beef. Yum... :)

Wow, didn't know they could be obtained already cut. That sounds too easy! :)

The molasses sounds interesting. Hmmm...might give that a try next time!

Oh, this sounds yummy. I do this with white potatoes, and sometimes with a whole variety of root veggies (carrots, turnips, parsnips, potatoes). But I've never used sweet potatoes. I'll have to give it a whirl.

Off topic, but don't loud restaurant customers tickle you? They can be so entertaining!
